For all the press (good and bad) that Deus has had, it seemed inevitable for me to give it a try. The bottling is quite fascinating indeed and my expectation of the fluid itself was simply of a Champagne. The sparkling wine flavors were not foreign to beer, so I could imagine one crafted to emphasize these values. The reality was completely different yet not unfamiliar. An effervescent column rises producing a fluffy white head that bubbles into a soapy bath on top of a dark Champagne colored body. However, the resemblance to its vinous compeer stops there. In the nose a strong blend of apple, white grapes, lemon, mint, ginger, waxberry, litchi, cloves and bacon give it the herbal connotations of tea. The complexity impresses but I can’t say the composition itself is most appealing. The flavor bears a striking resemblance to Unibroue Edition 2004 with its prominent waxberries complemented by notes of mint, pine, pepper, cinnamon, vanilla and smoked ham. With each sip an artistic pattern laces all sides of the glass and a slight syrupy texture coats the mouth. The carbonation matches the flavor delicately and finishes on a creamy wisp. Spectacular in its complexity, the medicinal qualities of the flavor makes it difficult to drink. The bottle I tasted was a acquired at the modest price of 9 Euros, however I cannot recommend it at any higher price than that.
